too tall IMHO, a 28" really filled up the well on the rear, take a look at the rears on mine, 255/45 work nicely on these cars on all 4 corners
a 29" with all that sidewall would hurt the handling as well I believe.
IIRC - the autos in the 5.0 2012+ S197s had a steep first gear so a lower ratio was proven better ETs (search - I know there are several threads out there) maybe the 3.31 or 3.08 (?) were shown most effective
Was in Fairbanks last April - was plenty of snow there!

IIRC, there's been frequent issues with the hydraulic line attached to the TOB having a clip that fails to hold and or snaps, you'll need to open up the housing to see if that happened, could be your parts are all good, just the line having come loose.
This past Dec I replaced a AZ "Duralast" in my Flex, it was about 10 years old, it was till viable, but testing suggested it was on the way out, so I had it replaced. I was shocked myself how long it was in use.

when you removed (disconnected) the DS for the clutch install - did you mark it and install it back in the same spot? DS have been known to cause vibrations, often times by indexing it 180* can solve the issue, it's a zero cost change (but for your time)
