The fins on the cover help to cool the rear differential fluid.
And it gives you the proper place for the vent. On top of the differential where it should not puke fluid in turns like the stock vents at the end of the axle. Also it comes stock on the GT500 and GT350. Why would you want anything else? :)

I have read good things about the Lube Locker gasket but I'd rather just get the tube of black out of the tool box. It's worked for me with 8.8's since the early 90's.

I used a lube locker on my 2010 GT. Ordered that from steeds.ca years ago. Works superb. Perfect seal. They are well made, and at the time, were reasonably priced.
The whiteline watts link differential cover uses a 5/8" thick aluminum flange, made from 7075 alloy. The watts link kit came with SS hex bolts, to bolt down the differential. No heat problems when beat on. But aluminum conducts heat 3X better than steel. The supplied drain + fill plugs make changing out the rear end 75W-140 real easy. The pass side catch can eliminated the gear oil from puking all over the ground. The bob's motor sports catch can came with a long enough hose on it, such that on a 2 post lift, with rear tires at full droop, still had slack on that hose. So far, so good.

Portions of the whiteline watts link aluminum differential cover are stupid thick. 4 of the bolts for the spider assy are 60mm long, and one is 40mm long. That's one helluva lot of aluminum mass.

Lube Locker has worked great for me. Plus, I reopened the diff after the initial install and reused it with zero leaks.

The new diff cover has a vent hole at the top. If I put a vent bolt there, I wonder if I can just plug the vent in the axle.
Yes.
I moved the axle vent to the top of the cover. And plugged the axle with a bolt.
Thats exactly what you want to do. Those axle vents weeped without hard cornering. And puked with hard cornering.
