So I got an autometer water temp gauge and am finding out you can't hook it up in our GT's? Is that correct or am I missing something?

I added mine to the upper rad hose.

That is a method used sometimes on OEM product..my Ranger's temp SENSOR
uses it, not to be confused with the temp gauge sender. It's somewhere else.
It has only 1 drawback, if you Tstat is stuck, the reading can be "wrong".
The engine might be a lot hotter than the blocked-out rad.
If it sticks open, as is normally the case, it won't matter then...
