The gauge not working won't affect the running of the engine.
What's the actual problem with the gauge? Do you have problems with any of the other gauges?
A common problem on 05-09 Mustangs is failing gauge stepper motors so that could also be yours. However it's also possible the ECT (cylinder head temperature) sensor under the intake manifold could have failed.

AFASIK the engine has only a cylinder head temp sensor and the water and oil temp is calculated from it. If the ECU doesn't get a temp signal the engine will run on a fail safe mode and therefore can run bad. I would try to read out the
coolant temp, CHT and oil temp PIDs to look into it.

I guess there will be a code, but I wanted to show a connection between faulty coolant temp and bad engine running.
I once had a bad coolant sensor without any code at my Mercedes, which had read 10°C too low. Engine was running during warm-up way too rich.
