Your car might drive like shit. But, unless you have a bunch of mods other than the Edelbrock, your peak HP isn't that bad. And variations between dynos might mean you have more or less HP than what would register at another dyno.

450 RWHP is the generally accepted "safe" HP for the stock motor, though I realize many guys are pushing it beyond that. They are not as risk-averse as I am . . . good for them.
I was at 450 RWHP from 2006-2007
500 RWHP FROM 2007-2008 and 543 RWHP FROM 2009 to now.
The car now has nearly 90,000 miles and over 2400 1/4 mile runs.
Best run of 11.139
A proper tune and good supporting mods are essential.

JDM Engineering.
It ran [email protected] on the canned tune with the 3.4" pulley Nov 3rd 2006 at their track day.
I had a custom dyno tune done the next summer with a 3.2" pulley.
2 years later I ported the blower and changed injectors and dropped down to a 2.95" pulley and a new dyno tune.
I'm running a Saleen 2.3L blower.

Several years ago I drove my car (‘05 supercharged Saleen) from Chicago to Michigan to have JDM tune it when they were in MI for a race weekend. Their work made it much faster and more responsive, with better MPG and hugely improved drivability. IMO there is lots of value to working with a tuner, be it this one or another one, who has LOTS of experience with S197s and will focus on drivability and your individual uses and preferences.

OP, best of luck sorting it all out, it is worth the effort!
