The driver side hose is the intake for the PCV system. You need a catch can on the passenger side which is where the oil vapors exit. That explains why you didn't collect any oil.
The Cyclone 3.7 is a very reliable engine and the 6ro80 automatic is very good too. Have a mechanic look at it if you are worried but those engines can go well over 200,000 miles easily. You will probably want to mod it a bit but that is what Mustangs are for. There is more stuff for Mustangs...
