Offset for the 18's will be +24mm and for the 19's it will be +35mm.
Look at tire availability. See what's out there and cost effective for wheel and tire packages.
18x9 and 18x10 would be awesome. b/c not many folks would want such a wide front rim. Some do, but not all. 18x9 would be perfect.
would the 18's fit over the brembo brakes?
would a 18x10 fit well in the rear of a '11 gt?
Why are 19" tires so much more expensive?

In general. Is it because of availability? My car has factory 19s and I have been shopping around a little looking for wheels and tires and noticed 19s are always a little more.
I want a black wheel and wider tires, but don't want to sacrifice streetability.
