here's a cheap one that's more of a pain in the ass than anything:
grind down all the welds on your car, it'll look nice AND be lighter!
Have you considered replacing all the windows with plexiglass? lawnmower battery? single tube exhaust?
otherwise...fiberglass everything seems to work okay too.
in that case yeah, i'd shed all the interior trim, dash, rear seats, replace side windows with lexan sheets.
and since you're fitting a roll cage, i'd also look into cutting out the rear parcel shelf, replace it with a reinforcement bar.
also how about cutting out the spare wheel well in the trunk along with the EVAP crap?
interior still has to stay stock looking so quater pannels, head liner, dash, and door skins have to stay...
You are basically building a NHRA Stock Eliminator roller. Except for the race seats.
The hard part is, you want it to be streetable too.
The heater/defroster system and wiring harness are important to streetability, but heavy.
Remove the center console, sound deadener, and install lightweight carpet first.
Oh, and titanium bolts? lol Get your wallet out...
