My 05 GT has about 70K miles on it and has never had the spark plugs replaced.

The Ford manual states a schedule of 100K for replacing spark plugs.

Any issues in waiting until 100K miles to replace the plugs besides having the plugs getting stuck in the engine?

I have no issues with the plugs currently.

I also may sell the car before it hits 100K.

If it runs well and you may sell, leave it alone.

If its an 05 I'm surprised the car is still running good at those miles. The early plugs sucked and no way I would take them to a 100k. I'm sure you would pick up some pep and mileage with a new set and if you do sell its a $65 maintenance that a smart buyer would be asking about anyway if they did their research on a 05. Get some autolite ht1's off rockauto and use the discount code.
Also don't break them and do a search on here about removing the old ones.

I ran my 05 with the stock plugs to almost 120k without any issues from plugs. I can tell you that if you run a couple of tanks of chevron fuel and a bottle of techron through it before you change plugs you will cut down on some of the carbon that makes these plugs sometimes a bear to remove. Also I ran my motor for 5 min before cracking the plugs loose 1/8 turn and used deep creep up to the porcelain on each plug. Let it sit over night and then hit it with an impact and they all came out clean and in one piece.

On my 06 I used a 50/50 of acetone and atf, apparently it's better than store bought stuff.

I was only in the 40's as far as milage but didn't break any
