After long debate I think I am going to run 255/40/19 front 285/35/19 rear.
The car is a daily driver with low track time, so running stock front tire size makes more sense, but I am concerned the car is going to understeer badly, can I easily overcome the added under steer from the wider rear tires using adjustable swaybars or different spring rates? Don't want to hurt my handling too badly

You shouldnt have too much on an issue.

Your fronts are 10 wide and rears are 11 wide. I would work with tire pressures and driving the car to see if "YOU" feel an issue or not. What "YOU" feel is not the same thing I would or anyone else will as we all have have a different driving style.

Curious though.....why 19" rims? I would stick with 18" or 17" if they fit the brakes.

Stiff rear swaybar is the fix. But I think you should run the car as is and go marinate in the understeer and come back to your "debate".

I wouldn't say staggered is Inherently bad, just that leaving available rubber/traction on the table is silly IMO. Running 10's on the front and 11's in the rear makes more sense if your all about stagger. At least you gain traction.

Edit-when I say "running 10's on the front and 11's in the rear" I mean max rubber without rubbing for those widths.

I have eibach coilovers so I know I can't easily run as much camber with the 10" rims, plus I need to use a spacer to install the center caps.

Stock rims I have half inch clearance between tire and shock body, bumping up will be zero clearance

Yeah the Eibach coilovers are not shaped well for a wide front wheel, that is true

The Boss uses a 255 front / 285 rear staggered setup. I believe the boss also uses a 25 or 26mm solid rear sway bar to correct the understeer.

I've been autocrossing a 275/305 stagger on 10.5/11 wheels, stock sways (the struggle is real) and I overcome it with rear tire pressure.

I don't know about the center cap. I guess that is an offset issue with your rims? But I know you were shown a way to mitigate tire-clearance issues as it was pointed out in post 170 of http://www.s197forum.com/forum/showthread.php?t=92566&page=9

How is your tire wear? Do you have more wear in the center of the rears?

Only been driving on them for 3500 miles so far, centers seem to be a tiny bit more worn than shoulders, and aggressive toe out up front is wearing the insides a little quick, but that turn in is too fun.

You can also try stiffer FRONT sway bar. It seems these cars can gain front grip from making the front stiffer (up to a point). This is true when you are on OEM or near OEM spring rates.

hmm. maybe too tall? I fit a 26.7" 315 up front... that 305 is only .5" taller.

The Boss 302 has:

255 front tires on a 9" wheel.
285 rear tires on a 9.5" wheel.

The Boss 302 LS has:

255 front tires on a 9" wheel.
285 rear tires on a 10" wheel.

In addition the LS model has about the same overall spring rates, but with the rear to front ratio raised 12% over the standard Boss 302 and a 1mm larger diameter (26mm) rear swaybar. This was done partially to compensate for the 0.5" wider rear wheels.
