Can bus has a total of 4 wires. HS can +/- and MS can +/-. Match those up and the guages should work.
You did not say what year car or which gen coyote you are swapping in. Gen 1 will work with the s197. Gen 2 however, will not.

Does power by the hour already make a quick swap harness for our cars?

Im not familiar with the control pack pcm. I was under the impression that the hardware was the same as any copperhead pcm. Only the flash was different, essentially turning off anything that is not needed to run the engine. (I ran the control pack strategy on a factory mustang pcm) So based on that, wiring up the can bus should be the same.
Can you post a pinout of the control pack pcm?

Looks like you only need the HS can. (I did my swap 4 years ago, memory fade sorry)
You need to find the hs can wires at the old v6 pcm plug and splice them to the control pack. Makes sense as that is what carries the guages, including the speedo. the wires you are looking for are in the 50 pin v6 pcm connector, c175b. I think you can just pull them from the 50 pin connector and repin/insert them into the control pack pcm connector.
But that makes me ask, how is the gas pedal wired to the control pac? Is there a 7 wire harness you had to feed through to the cabin?
Best I got as I have no experience using the control pac wiring.

Ps: I estimate I spent roughly 40 hrs over a week on just wiring mine. But I combined the 2013 engine harness and the 07 harness, repinning the pcm connectors.

Yes there's a clutch sensor and a apps wire on the control pack.

It maybe still in testing. It was a super easy swap. The hardest part has been getting the clutch throw out bearing correct. My swap was done on YouTube. You can look it up foxcast media on you tube.

I saw that and am doing the swap now too, I had almost 1/2" of preload on the TOB. Do you know what you guys ended up getting it to when shimming? I'm running and Exedy flywheel and their single sport series clucth with the TR3650

I don't believe the Ford Control Pack for GEN3 supports Speedo, out of the box. I am in the end of a Gen 3 swap into an S197 and OSS/VSS pins aren't populated on the Manual Transmission Harness. Has anyone solved this for the Gen3 control pack? I see most guys running around with a GPS Speedo...
