Has anyone had an issue with 05 GT where steering wheel is turning a little harder than norm AND you can hear a slight power steering whine but fluid is not low or leaking?

Could be old fluid, could be a bad pump, or both.

I would suction out the old fluid and inspect, replace with fresh fluid and see if it helps.

Another factor can be the type of fluid. The suggestion to replace the fluid is a good one (empty the reservoir), and fill with mercon v transmission fluid (that's right, mercon V is what the specs call for using).
But, it does sound like the pump is on its way out.

Which REALLY SUCKS because this car only has 44k on it (39k when I bought it 3 years ago). Could it be from age as opposed to wear and tear?

I’m telling you, try the fluid swap first.

My 3v had a noisy pump and it was just old fluid….

And if it is a pump worst case, it’s really easy to swap.
