Removing the old exhaust manifolds and replacing them with Jet Hot units. I keep hearing not to use the oil pan. Where do you lift at?

I think I used a couple 2x12 screwed together on a floor jack at the front of the pan. I definitely tried to make contact with the bolts. It did lift the engine straight up. I have had a small leak around the pan gasket, but at >100k miles I can't say that the lifting caused it or made it worse.

But don't put yourself in harms way. After you get the engine lifted, you need to get it sitting on something other than the jack. I honestly don't recall what I did last time. Possibly used a jackstand with a board across the top on the oil pan. I think that was it. Wasn't sure if it would dent the pan. It didn't.
