I have a lead on a used set of Convex's for less than $1k shipped

I wanted these for a very long time, but I didn't like how the front wheel looked so flat faced.

Those are on his car. Wheels, car, everything about it is meticulous.

Do you know what size tires he was using?

I want to use 275/35/20 Nitto 555 fronts and 305/35/20 Nitto 555R rears, but I'm a bit worried about that tall/wide rear tire rubbing

What about a 305/30/20 rear tire. That is the ideal rear tire size IMO, tire prices are steep though.

With the correct offset they won't rub on the rear. Mine rubbed with a +35 on the rear.

With the correct offset you won't come close rubbing with 305s. ...and heaven forbid don't buy Jewc wheels. You guys would run into each other living 1000 miles away. Lol.
