I think it would be a very cool idea and planned to do it on my 06 a few years ago. The issues I ran in to were these:

Old gas caps are much smaller in diameter than the faux cap on the back of our cars.

The faux gas caps are very thin, where the old gas caps are an inch plus thick (not including the center section with the teeth to lock the cap on the car.

I was planning on using a 1969 gas cap which is even bigger than the earlier models and it was about an inch and a half shorter (top to bottom) than the faux cap.

What to do with the key hole that is now exposed?

I think it would be really cool back there and would be very original, I didn't have the tools to do it right so left it alone.
They are metal arent they, so I could polish them?

The way I see it, it could just be a matter of fitment, shaving the back end and going with some 3M or sealant on the back. I haven't gotten hands on yet so a lot of this is speculation

The 60's gas caps are a chromed pot metal with steel (I assume) fitting on the inside for where the cap screws in to the fill tube. The pic below is the backside of the 69/70 gas cap. Basically it is hollow except for the center where it attaches to the fill tank. It would need to be filled and 3M taped to the deck lid. I considered cutting mine so it was only half as thick but still would have had to fill it and tape it.

Did the ol' oring between rear view mirror bracket and windshield trick to get rid of the annoying ass rattle from the mirror when bass hits. Worked like a charm.

I think that 69 cap would probably be the easiest since the 69 panel is relatively flat. The 67 I was looking at using has the concave rear panel and the cap happened to be the flip down type. My intention was to have the key slot inside where you would flip it down to access it. Well it just didn't line up right plus the amount of modification to the 67 cap was just too much. I hung it back on the wall with the rest of my Mustang memorabilia.
