Didn't the GT500 had a one piece DS?

Yes, but the GT500 had different NVH standards than the GT and a CF driveshaft will shatter in compression (like in a crash) so it won't come into the cabin, won't pole vault the car and won't prevent the motor from "submarine-ing" which it is supposed to do.
