Do you change your oil even if its only got like 1,000 miles but several months old?

I change mine once a year in the spring after it comes out of hibernation. Its an 05 with less than 30k miles on it, tells you how much its driven each year.

My wife's Flex and my F150 barely see 3000 to 4000 miles a year. So, I end up just changing it about the time they need their yearly inspections.

What's considered the engine is fully up to operating temps? When the water coolant temp reaches 195*?

Change mine yearly with mobil1. i dont drive it over 5k in a year

i change my oil filter at 5k an top off will mobile 1. after 10k i change everything. never had a problem with any of my vehicles. my old civic had over 250k miles on it.

Swap mine every 6 mos even if it has only been driven a few miles. I run breathers so it is not very efficient at actually removing fuel and and moisture from the engine crank case. that stuff dissolves back into the oil so i change it more often than most. every 3K miles or 6 mos, whichever comes first.

I would say when the oil temperature stabilizes. Water temp comes up much quicker.
